I often make grilled cheese sandwiches to go with the soup, but this time I was feeling lazy and didn’t want to hassle with the whole making grilled cheese sandwiches….I know I sound like a total baby. Instead of grilled cheese, I cut a baguette in half lengthwise and then in half crosswise. I put a small amount of butter and a small amount of mozzarella cheese on the baguette. Popped it into a 400 degree oven. When it was toasty and beginning to brown, pulled it out, and voila! Perfect simple tomato soup accompaniment.
This Valentine’s Day dinner pairs perfectly with the cute Valentine’s Day Chocolate Chip Cookies I made. You could also make the cute little Valentine’s Day Treat Bags to make dessert a little bit of a surprise.

Looks really good. I wish my husband liked tomato soup. I might have to make this for lunch someday for me and the kids and forget about him.
You never know, he may like it. I don’t traditionally like tomatoes or tomato soup, but I like this soup. Not sure why. Hope it works out if you try it!

Yum! What do you do with the bread cubes?
It is listed in the recipe, but you cook it in with the tomatoes. It ends up acting as a thickener versus using cream.
