You ready for an easy and super yummy vegetable side dish for your family? I’ve got a delicious roasted cauliflower recipe for you today.

Such a delicious and easy roasted cauliflower recipe. We love cheesy vegetable sides dishes like this that are perfect for the adults and for the kids, too. | Recipes

In the summer of 2015, when my girls and I went on our 7,000-mile road trip to the Northwest, we stayed with my cousin in the Seattle area. She made the most delicious roast cauliflower one night we were there. She is one of those wonderful people who just go into the kitchen and add this and that and things come out tasting amazing. I wish I was like that, but I am not.

Since then we have been making and eating various versions of the roast cauliflower. Since I’m a recipe follower, it hasn’t turned out great every time. I decided it was time to create my own recipe so that we could consistently enjoy roasted cauliflower. You know, it is that principal that if you find something your kids like to eat, you should feed it to them.

After some trial and error, I came up with a recipe that works and is delicious.

This is a super simple cauliflower recipe. You will just cut your cauliflower into florets and toss them with olive oil, garlic salt, and parmesan cheese.  Then roast them in the oven.

One of the big things that I think makes this so yummy is the garlic salt. My cousin showed us her garlic salt grinder. It is from Trader Joe’s. That is what we use not the pre-ground garlic salt because that tends to be WAY too salty. If you can only find the pre-ground garlic salt, I would recommend that you reduce the amount you use or just go with minced garlic and a small bit of salt.

I’m telling you, this is the best roast cauliflower! It is so yummy, but then again with the right amount of garlic salt and cheese almost anything can be yummy. 🙂 It also pairs perfectly with the Herb Roast Chicken Recipe I shared with you last month. They are so easy together because they both cook at the same temperature. Love that!
