Who’s ready for a quick and light summer dinner recipe? Today, I’ve got a newĀ pasta recipe for you and oh my goodness…it is so yummy! It also is really good leftover which makes for some easy lunches. That is always a super great bonus in my book!
I know I eat differently in the summer than in the winter. I also cook differently. Who wants to heat up the kitchen in the summer, not me. I’m willing to bet you change your eating and cooking as well. We love pasta at our house, but we tend to eat it more in the winter than the summer.
A great summer solution for our love of pasta is pasta salad. I love pasta salads, but often they are overly oily and/or mushy and not the best as a stand alone for a dinner. This recipe is not oily, nor is the pasta mushy and best of all it works great for a stand alone meal. The great thing is that if you want to you can cook most of this on the grill and you can just as easily prep this in your kitchen. I love when a recipe has flexibility like that. I’ve got the full recipe for you below, but this recipe is simple and my kids LOVE it. I love that they are getting a good serving of veggies and some delicious all natural sausage as well.
To make this, you will cook your pasta. Make sure to run cold water over it when it is done cooking. Then you can prep your red peppers and sausage on the grill or in a grill pan(affiliate link) on the stove or the oven.Ā One of the things that I love about AidellsĀ® Sausage is that everything is all-natural and there are no nitrites and no added hormones. They also are fully cooked, so they are super quick to be ready to eat. After grilling, sauteing or cooking your sausage and peppers, you just toss those together with your pesto and arugula and eat. The hardest part was deciding which of the great CupcakeĀ® wines to pair with my pasta. They have so many wines it was a tough choice. Their wines are perfect to make any occasion special and delicious. I know that many wine experts say that chicken and pasta are best with white wine, so I bought the CupcakeĀ® Angel Food wine, but since I love red wines, even more, I decided to go with the CupcakeĀ® Red Velvet wine. For me, it was a great choice. The CupcakeĀ® Red Velvet wine is luscious, silky, and intense, but it isn’t too heavy. For my taste, it pairs really well with the pasta and the sausage, but I know some wine purist will disagree with my pairing, in which case, you can go with the other excellent choice of the Cupcake Angel Food wine.
Oh, my yummy pasta dinner! My kids have eaten this many times and love it.
