I’ve got a yummy idea for some fun with your kids today. How does making homemade ice cream sound? Sounds yummy to me! I’ve got a super delicious Thin Mint and Mini Chocolate Chip Ice Cream recipe for you today.
As part of our ideas for some fun summer activities for kids and parents to do together, my girls and I made some delicious ice cream together. We had fun cooking together and then we got to eat some yummy ice cream. Sounds like the perfect summer activity to me!
This is only one idea in my series of Real Summer of Fun activities. The activities are designed to be simple and inexpensive things we can do with our kids to make this a summer of real fun for everyone.
To make this ice cream, we started with something fun. We had to ‘coarsely chop’ the Thin Mint cookies (which we still have a stash of in our pantry, but if you don’t just use Grasshopper cookies). I put the cookies in a zipper bag and let the kids throw them on the ground a bunch of times. I did a bag as well. It was fun! It may have been a bit too fun as we ‘chopped’ the cookies up too much.
If you don’t want to let your kids throw the cookies on the floor (they are in a zipper bag), you can let them whack them with a rolling pin or a pan to break them up. It makes it fun.
Place the cookies and mini chocolate chips into the freezer.
Mix up your ingredients. (The printable recipe is at the end of this post.) I used my mixer (affiliate link) this time instead of hand whisking things. I really liked using the mixer. I used the whisk attachement.
Once you have everything mixed, pour the ice cream into the ice cream mixer (affiliate link). Make sure you put the bowl in the freezer the night before. Set your timer for 17 minutes.
After 17 minutes, add in the cookies and mini chocolate chips. Mix for an additional 3 minutes.
Pour the ice cream into a freezer safe container and place in the freezer until completely frozen.
After your ice cream is frozen, you can serve it on a cone. Of course you can serve it in a bowl or waffle bowl as well.
Sometimes being the child of a blogger is really challengining…like when your mom has to photograph ice cream at 11am and then ‘forces’ you to eat ice cream before lunch. Lol!
My girls and I had fun making ice cream together. Not only did we giggle and enjoy spending time together, but we got to eat some delicious ice cream. It is so yummy. This recipe makes a smooth creamy ice cream that had such great mint flavor from the cookies and just a little bit of crunch from the mini chocolate chips. Oh so good! I think I need to go eat some more right now. 🙂
