Fall is upon us! Are you ready to eat tons of apples and pumpkin everything? Yay! Today, I’m sharing a delicious apple, almond and honey granola recipe that is perfect for fall (or anytime of the year).
At our house, we have yogurt every morning with our breakfast. We started doing that years ago so I could mix in a fish oil supplement(affiliate link) along with a probiotic(affiliate link). They both made a huge difference for my kids.
As my kids have gotten older, I’ve needed to find other ways to get that extra nutrition into their diet. So, I promised my younger daughter I would make her some granola that she could add to her yogurt and would have some of the DHA and other goodies that I like her to get in her diet. Of course, it had to taste great as well.
To make this fall inspired granola, you will need oats, golden flaxseed, almonds, dried apples, vanilla, honey and Crisco® Unrefined Organic Coconut Oil. It pairs really well with the homemade Starbucks Banana Bread we love to make, too!
The flaxseed contains the DHA that I’m trying to get into her diet. It is great for brain development in children.
I got my Crisco® Unrefined Organic Coconut Oil(affiliate link) at Target on one of our fun trips to Target before school started. The Coconut Oil is a great source of Caprylic Acid, Lauric Acid, and Capric acid (fatty acids our bodies need) and has been shown in many studies to have some great health benefits as well. Almonds are also another great source of nutrition as are apples and oats and I could keep going….you get the point. I packed a lot into this granola and I made sure it tasted great as well because if it didn’t taste great all that great nutrition wouldn’t get eaten.
I made this recipe a couple of times to get it just right. In the end, I went with a method of cooking the oats and flaxseed mixed with the honey, vanilla, and Crisco® Unrefined Organic Coconut Oil for a short bit. (I have a printable recipe for you at the bottom of this post) Then pulling that out of the oven and adding the almonds and dried apples. That way they didn’t get overcooked.
If you are using raw almonds, cook them for the full time. I used almonds that were already dry toasted and lightly salted, so cooking them the full time left them with a funky slightly burnt taste that was not good.
By adding a small amount of the Crisco® Unrefined Organic Coconut Oil, you add just a hint of coconut flavor to the granola recipe. Since my youngest daughter prefers to eat foods with the Non-GMO product label, the Crisco® Unrefined Organic Coconut Oil fit the bill perfectly. In addition to that, it is Organic, which for our house Non-GMO and Organic are the combinations we like best for our foods. The best part of all that goodness is that adding the unrefined coconut oil adds more layers of flavor to the granola.
If you prefer not to have that coconut taste or aroma you can use the Crisco® Refined Organic Coconut Oil(affiliate link). The Organic refined coconut oil does not have the flavor and aroma of coconut oil which makes it a great substitute for butter and other oils in your cooking.
My daughter has been enjoying her new taste of fall in this granola recipe and I love knowing that it not only tastes great but that it is adding some extra nutrition to her mornings. She does want you to know that it does not taste the best with Strawberry yogurt, but it would pair really well with vanilla or even a pumpkin yogurt. 🙂
