Have you ever made homemade chicken nuggets? They are one of those things that seem to me like they would be hard to make, but have actually become part of our easy dinner ideas. They are also something you can get the kids involved in making. At my house, when I get the kids cooking, they eat all kinds of things they wouldn’t normally touch AND they rave over how great what they made tastes.
For this recipe for homemade chicken nuggets, I started with a recipe we have used many times and I modified it a bit. It is quick and easy to make and I turned it into an even easier dinner with my side choices. Now it has become one of those quick weeknight dinners for when we have other things going on and I don’t want us to eat out.
We LOVE Cheddar Snack Crackers…we might even be addicted. Who am I kidding…we are totally addicted. So it was super easy to come up with a recipe featuring them for Horizon, who sponsored this post today. I changed this recipe up this time by switching out the plain crackers in the original recipe with Horizon’s new Cheddar Snack Crackers. So, adding them to a tried and true chicken nugget recipe only makes things better. 🙂
To make these nuggets, you take the crackers and smash them up. My kids always have fun with this part. Then you take your chicken tenders and cut them up into bite sized pieces. Dip those in your milk mixture (all of this is in the recipe you can download at the bottom of this post) and place them in a zipper bag with the crushed up crackers and cheese. Let the kids shake them around until they are fully coated. Cook them up and you are done.
The other great thing about this recipe is that you can make a double or triple batch, which just takes a small time more, and pop them in the freezer. Now you have made several meals at one time and made your life and dinner time a touch easier! Love that!
I don’t know what your weeknights look like, but I’m going to guess they are similar to mine. They get so hectic and getting everything in and everyone to bed on time because quite the task. I decided to make this dinner super easy and bought the carrot sticks that are already cut up and the Horizon Tuberz to go with my Cheesy Chicken Nuggets.
I’m telling you, it was so lovely to just pop those on the plate and be done and yet, it was a well balance meal for everyone and super yummy! We did not have leftovers or the dreaded, “Mommy, I don’t like this.” with this dinner. That equals Mommy perfection for dinner!
