Crazy Easy Spanish Rice Recipe

I have got the easiest recipe for you today. It almost seems wrong to post it, it is so easy. Yet I know that many of you are busy moms, like myself, and that you have picky eaters in your house as well. If you have ever wanted an all natural and crazy easy Spanish rice recipe your kids will eat…then today is your lucky day!

I’m telling you sometimes feeding my kids is the hardest part of being a parent. They can be a bit picky, though I know I’ve got it easy in that department compared to a lot of my friends.

I grew up in the Southwest and Mexican food is one of my favorites. As you may remember, I also like to eat as natural and organic as our budget can afford. For a really long time Trader Joe’s sold a Mexican Rice seasoning kit. It was really good and really easy. However, they either stopped selling it or they don’t sell it in the region in which we currently live. I had to come up with a new plan. My new plan is what we call cheater Spanish Rice, but that didn’t sound very good for a title, so I changed it to Crazy Easy Spanish Rice.

You ready for the secret to my Crazy Easy Spanish Rice recipe?

Start by cooking your favorite rice how you normally cook it or according to the directions on the package.

If I have enough time, I prefer to use brown rice, but often on busy nights I make white rice because it cooks up so much faster.

My secret ingredient — Add 6 tablespoons of your favorite salsa. Now if you are trying to please any picky eaters, pick a salsa that they like. My kids love the mild chunky salsa from Trader Joe’s, so that is what I use. The best part of this recipe is that depending on your taste, you can make this rice as mild or as hot as you want it. It all depends on the salsa that you use. Genius, right?

Is it truly Spanish rice? Nope.

Is it crazy easy? Yep!

Do my kids love it and gobble it up? Yep

    Hi, I’m from Spain and was baffled thinking why you would call this recipe Spanish rice, until I read it all *LOL* Seems yummy, though, I’m definitely trying it.
