I’ve got the cutest and most fun breakfast idea for you today! It starts with an easy pancake recipe, then you add a little bit of fun and voila…an adorably delicious breakfast!
This idea all started from this Instagram post from HGTV I saw back in December. The problem was that when I followed their directions to look at their Snapchat account, the directions were already gone. Then I searched both HGTV and Food network websites for the recipe and couldn’t find it there either. I did a little more searching and still couldn’t find anything, so I decided to create my own pancake cupcake recipe.
I know it may seem fussy to make these, but it really doesn’t take more time than mixing up and cooking a batch of pancakes. It is just doing things a little bit differently.
I have a full printable recipe for you at the bottom of this post. The main tip I want to give you is to make sure to spray your cupcake liners.
The pancakes tend to stick. However, I found, after several trials, that you have to spray them immediately before you fill them. If you spray them and then let them sit around while you mix up the batter, the pancakes, totally still stick to the liners.
I found it easiest to use one large scoop per pancake cupcake (affiliate link). It meant I got the same size cupcakes each time and got 16 out of each batch.
I changed the recipe a bit from the one you saw in that Instagram video. I thought whipped cream would be SO much easier. It also goes really well with pancakes, so I swapped out their buttermilk frosting for whipped cream
Once your pancake cupcakes have baked, add whipped cream to the top to look like frosting. You can use canned whipped cream or homemade. The homemade will stand up better and hold the little pancake better, but both work fine.
If you don’t want your whipped cream to melt and the mini pancake to topple over, I would recommend that you allow your pancakes to cool completely before adding the whipped cream.
Sprinkles and a drizzle of syrup add deliciousness and make these look just like cupcakes.
My daughters think this would be a super fun breakfast for a sleepover. They want to use them since they look so much like cupcakes. It sounds fun to make their friends think they get to eat cupcakes for breakfast. They certainly would be easier than the rainbow waffles I made for one birthday party.
This really is an easy pancake recipe despite the fact that it looks fussy. You can add nuts or chocolate chips to the batter to add some different flavors as well.
