Yay! Today I’ve got some super easy and delicious family dinner ideas for you.
This summer, my girls and I had a goal(well, it was mostly my goal, but I got them on board and helping more with meals). We wanted to make our lunches and dinners easier and we wanted to add a bunch of new recipes using fresh ingredients. The first step was to make meal planning quick and easy. Next up was to find or create recipes that are delicious, healthy and quick.
I have to say; it has been so nice to not only be able to plan meals quickly, but to have variety and ease in our lunch and dinner prep. While I enjoy cooking, sometimes as a mom, it feels like all I ever do is cook and clean up the kitchen. You know what I mean, right?
When my girls and I went to Arizona this summer, my mom made biscuit cups. It was a recipe from a family friend of ours. She made them with BBQ sauce. We really liked them, but my girls aren’t the biggest fans of BBQ sauce, so I changed the recipe to have all kinds of variety and be more specific to our family.
These biscuit cups are super easy to make and once you get the measurements right, you can literally create just about any variety you and your family will like.
Family Dinner Ideas:
I have a full printable recipe for you at the bottom of this post. You will just need a few ingredients to make these biscuit cups. You will need a meat or meat substitute, a sauce, biscuits and of course some delicious cheese because in our family cheese is what makes the meal! We ♥ cheese! For these varieties of biscuit cups, you will need two varieties of cheese. We used a bag of the Sargento® Shredded Mozzarella and a bag of the Sargento®Shredded Monterey Jack Cheese. Yum!
We like Sargento® Shredded Cheese because it is always shredded from blocks of real, natural cheese. In addition to that, the fact that the shredding is already done for me makes the job of making dinner just that much faster and easier. Win, win!
Step 1:
The mini biscuits are supposed to be easier for this recipe, but where I shop they only have the jumbo biscuits. It is no big deal, just cut them up and piece them together in your muffin tin.
Step 2:
Mix together your meat and your sauce. I have the specific measurements for you in the recipe at the bottom of this post as they vary a little bit with the different types of sauces.
It is super easy to use a small scoop and add one scoop to each muffin tin. If you don’t have a scoop, just use a spoon or your hands.
Step 3:
Sprinkle each biscuit cup with Sargento® Shredded Cheese. In this case, it was the Sargento® Shredded Mozzarella.
Step 4:
Bake until the biscuits are golden brown and the cheese is browning as well.
The baking time does vary a little bit with each variety. I have all of that listed for you in the recipe at the bottom of this post.
This variation was our diced turkey meatball with teriyaki (or soyaki) sauce and Sargento® Shredded Mozzarella. Oh, my yumminess! It might be my favorite. 🙂
Another variation we love is the Turkey Meatball with pesto and Sargento® Shredded Mozzarella.
This one is the turkey meatball with salsa verde and Sargento® Shredded Monterey Jack Cheese.
A tip for you:
By using frozen turkey meatballs, I saved myself time over cooking the ground turkey and needing to dice up onion, etc to add flavor to the meat. The turkey meatballs already have flavor. All I had to do was defrost them and dice them up. Easy peasy and quick!
Another variation is the chicken with chunky salsa and Sargento® Shredded Monterey Jack Cheese.
Finally, I made a chicken sour cream salsa with Sargento® Shredded Monterey Jack Cheese.
I’m telling you all the variations I made were really yummy. If your family doesn’t love these flavors, it would also be so easy to come up with your own variations that combine flavors they love. Just use the recipe below as a great starting point for measurements as well as baking times and have fun experimenting. Don’t forget to pick up two bags of Sargento® Shredded Cheese to try these recipes at your home because any great tasting family dinner totally needs cheese and cheese that has been shredded fresh off the block. Yum!
