Who is ready to do some holiday baking? I am. I’ve got a delicious snickerdoodle recipe for you today that you won’t believe how I made it just a little bit healthier.
This is actually the only time of the year that I make cookies. Yep. My poor family has to do without cookies all year. Don’t you feel bad for them? I don’t. Cookies are my least favorite thing to make. All that scooping and baking, it feels like it takes forever to me and yet I love eating cookies. My favorites are Snickerdoodles and Chocolate Crinkles with Russian Teacakes coming up a close 3rd place.
One thing that I also don’t like about making cookies is often the recipes call for shortening or other ingredients that are hard to source and/or expensive to source in all natural forms. Yet lots of years for the holiday’s, when I actually make cookies, that is what I have done. This year I have a new trick up my sleeve and I’m going to show it to you.
Yep, you are seeing that correctly. The trick up my sleeve is I Can’t Believe It’s Not Butter! They recently reformulated their product. It is now made from all natural ingredients AND it is sourced non-GMO! Isn’t that fantastic! It is the first big national brand that I know of to make the move to not only make their product with ingredients in the list that you can read and know what they are, but they are also not genetically modified. I for one want to support them and more products like these as they come to market.
It made it really easy to swap out the shortening that I would have normally used to make these Snickerdoodles. I swapped an equal amount of the I Can’t Believe It’s Not Butter! for shortening.
Just mix up your dough (all the directions are in the printable recipe at the bottom of this post) like usual and drop the cookies into the cinnamon sugar mixture. To get the best Snickerdoodle flavor, make sure you coat the whole cookie in the cinnamon sugar mixture. Bake for 8 to 10 minutes. Pretty easy!
The cookies baked up just like I expected and had all the great taste they usually do. The fact that I used I Can’t Believe It’s Not Butter! means that I added the good monounsaturated and polyunsaturated fats as well as omega 3’s along with a whole lot fewer calories. Sounds good to me! Maybe I can eat an extra cookie or two this way. 😉
I’m definitely going to try making this swap with other cookies I plan to make this holiday season and I suggest you do the same. I think it is so great to have a healthier and non-gmo product that I can grab at any store and not feel bad about using it in our cooking, baking or for spreading. I think I will swap out the butter in my Sugar Cookies or in the Chocolate Spice Cookies to make them a bit more healthy.

I’m with you Sarah. It was also great to try something new and find something on the market that is non-gmo and readily available. We have a hard time finding things like this and even Organic butter where I live, so I’m glad to see something that I should be able to find!
I am so surprised that they turned out so beautiful! I never would have expected them to look so good and taste the same as they would with butter. I’m going to have to try. i’m all for eating an extra cookie or two this season!
