Turkey Nachos ~ Leftover Turkey Recipes

As I’m sure you are quite aware, Thanksgiving is rapidly approaching. After Thanksgiving I’m usually left scrambling trying to figure out what to do with leftover turkey. The problem is that most of my old ‘go to’ leftover turkey recipes, my kids don’t like. I keep trying to find new recipes that everyone likes, but I haven’t had a ton of success. Until I made this dish last year. We have a winner! And I am totally the sharing type so I have the recipe for you as well.

This is the perfect recipe to add to your Thanksgiving recipes. It is always great to find leftover turkey recipes that the whole family will eat. This is it! We made this last year and everyone loved it...they gobbled it up.

I found a recipe in the Biggest Loser Family Cookbook that I liked, but I wanted to tweak it a bit to be something that could use up leftover turkey and something that my whole family would enjoy. Yippee! I had success. 

This is the perfect recipe to add to your Thanksgiving recipes. It is always great to find leftover turkey recipes that the whole family will eat. This is it! We made this last year and everyone loved it...they gobbled it up.

This recipe is crazy easy. You just mix your leftover turkey, which you have cut into bite sized cubes, with salsa. Then you place that mixture on top of tortilla chips and add shredded cheese. Bake and enjoy! I’m telling you…crazy easy and super yummy. You add your favorite salsa, so if your family likes things spicy, spice it up. If your family is like mine and are spice wimps, you can use mild salsa.

This is the perfect recipe to add to your Thanksgiving recipes. It is always great to find leftover turkey recipes that the whole family will eat. This is it! We made this last year and everyone loved it...they gobbled it up.

Whatever salsa you use, you are sure to enjoy these delicious leftover turkey nachos. We just ate them this week, because I had to make them for this post. Once again, my girls gobbled them up(Thanksgiving pun intended). In my house, when I can find a recipe that is crazy easy AND uses up leftovers AND everyone loves to eat it…huge win!

    I rarely “recreate” leftovers. I tend to eat them as they were originally intended. (Does that even make sense??? lol) But these nachos sound so good! Gotta give ’em a try.

    P.S. Can’t believe Thanksgiving is upon us!!!!!!

      It totally makes sense! My husband won’t touch leftovers…yet he brings them home and leaves them in the fridge. ??? Not sure what that is about…anyway, if you don’t like leftovers, you can always make these with turkey or chicken that you cook specifically for this (which is what I had to do for this post since I don’t have leftover turkey yet). Hope you like them if you give them a try!
