Chocolate Cookies {Recipe}

It’s time for another of my Grandma’s recipes. After the Potato Filling, everyone wanted me to make her chocolate cookies. Well, I made her chocolate cookies and they were super yummy, but I totally messed them up from the way she made them.
Chocolate Cookies
Looks delicious, right? They are super yummy. The only problem is that my Grandma’s chocolate cookies are supposed to be thin and crispy. These came out more brownie like than thin and crispy. Clearly, I’m going to have to try these again to get them more like Grandma made. Anyhow, they were yummy, so I’ve got a recipe for you to make your own batch of chocolate cookies.

Let me start by telling you a little secret. I hate making cookies. Yep, there I said it. I really don’t like making cookies. I know it sounds so dumb to say out loud, but I can’t stand the whole process of scooping them, baking them on trays, waiting for the various batches to cook, cooking more, scooping more, and waiting more. Yep…not my thing. So, I was really glad to see that the recipe everyone really wanted me to make was at least a bar type cookie! Yay! None of the fuss of cookies.

Chocolate Cookies
I have a printable version of this recipe for you at the bottom of this post. Once again, cooking from my Grandma’ recipe was an adventure. The recipe just reads to mix everything together spread on a pan and bake between 300 degrees and 325 degrees until dry. Um…OK… this detail recipe loving girl had to figure it out. I didn’t get it quite right this time, but I did get yummy cookies, so in the end , it’s all good.
I melted my butter (yes another of her recipes with A LOT of butter) and chocolate together. If you use softened butter instead of melted butter, your batter will look slightly different from that pictured above.

Once the dough was mixed up, I used a sheet pan and an offset spatula.

I spread the dough out to completely fill the sheet pan. I thought this was thin enough. It wasn’t for the cookie that my Grandma used to make, but it did make a yummy brownie like gooey cookie. Yum…Yum…and Yum.

My Grandma’s favorite was to put chopped salted peanuts on top. I have a peanut allergy, so I put salted pecans on top of mine.

After baking, for what felt like forever because of the low oven temperature, I had a pan of gooey chocolate cookies.

All the yumminess without all the fuss…Chocolate bar cookies. I will definitely try these again another time. I will try splitting the full dough between two sheet pans. That seems so thin to me, but I think that is the way Grandma used to make them and everyone loved them…so I’m going to have to see what the fuss is all about! 🙂
