Super Stuffed Tortillas

I felt like sharing a favorite healthy and inexpensive recipe of ours. This is a healthy quesadilla that we all like…even the kids (though they do pick out 1 veggie each).

Delicious and super easy Quesadilla recipe. Healthy dinner the whole family will eat.

Super Stuffed Tortillas from Simply in Season (affiliate link) cookbook by Mary Beth Lind and Cathleen Hockman-Wert. UPDATE: Here is the latest version of the cookbook. I love the look of the new version and all the great photography. I don’t know if it has Super Stuffed Tortillas in it, but if it is as good as the one I have, it should have great recipes.

I can’t put the recipe here as it is from a copyrighted book.

Anyway, this is a quesadilla that we enjoy. It is filled with onion, bell pepper, corn, zucchini, black beans, salsa with some garlic, cumin and chicken or vegetable broth. All of that is cooked together and used to make a delicious filling between 2 tortillas (with cheese of course). I vary slightly from the recipe.

It calls for green pepper, which we don’t prefer, so we use red bell pepper. We also don’t like nearly as much cumin as the recipe calls for, so we only add a few shakes for some great smoky flavor. You could very easily modify this recipe for what veggies you have on hand or those you know your family will eat.

As I stated at the beginning, my kids will eat this. Snowflake picks out the zucchini and Pumpkin picks out the red pepper. I am fine with that as I figure they are still getting lots of healthy vegetables and beans.

When we were getting shares from a local food co-op, I found this Simply in Season (affiliate link) cookbook. It was hugely helpful in knowing not only recipe ideas for things I had never cooked with before, but also has a whole section in the front on how to best store your produce to get the longest life out of it. Which if you shop at a farmer’s market or get food from a co-op is super helpful because they do seem to go bad faster than grocery store produce. We have liked most of the recipes we have tried from the cookbook. Just made a slow cooker chicken cacciatore a little over a week ago that we all liked and there is an awesome grilled Greek chicken salad in here as well.

I’ve got an full recipe for another super simple, quick and healthy dinner our whole family loves. It is for some kebabs…fun family dinner.
