This post was sponsored by Hello Happy. Hello Hershey’s as part of an Ambassador Activation for Influence Central.

Summer is officially here! Yay! Not only was last week our last week of school, but today is Summer Solstice…so it is summer for sure now. I’m just going to ignore the mosquitos, humidity and thunderstorms and pretend I still live in Oregon where summer is glorious! I’m also going to get out the ice cream maker and have some fun creating summer ice cream flavors….like Sweet Cream S’mores Ice cream. Hello Happy! Yum!

Homemade ice cream is so yummy! This sweet cream s'mores ice cream recipe is a delicious homemade dessert.

We love making ice cream. It is so easy and it is fun to come up with your own flavors and ideas for what should go in the ice cream(like the ice cream we made last summer)…plus eating it is always yummy. So, when HERSHEY’S asked me to come up with something for the summer solstice and sent me a chocolate pack as well as sponsored this post, I knew it needed to be something S’mores and Ice Cream because those things are summer to this Girl Scout and Arizona girl.

S’mores have to have the delicious roasted marshmallow, so you will need to roast a few, but you don’t have to go start a fire, you can roast them in your oven. The trick that I found is that you need to spread your marshmallows out on the pan so they don’t clump together. It makes it easier to add them into the ice cream if they are separated.

As you can see, someone thought she needed to sample a few for me to make sure the marshmallows were good. πŸ˜‰

I’ve got the full recipe for you at the bottom of this post but make sure you watch the marshmallows carefully in the oven. I broiled mine and they go brown really quickly.

You can’t have S’mores without graham crackers and without the delicious HERSHEY’S Milk Chocolate bar. I added those into my ice cream as well.

Once the ice cream has set, it is time to serve it and eat it. Once again, my daughter was willing to help. πŸ™‚

I toasted some extra marshmallows to add as a garnish to the top of our bowls of ice cream.

I also thought it was cute to cut some extra chocolate wedges and added those along with a graham cracker wedge as another garnish.

The ice cream doesn’t have an overwhelming S’more’s flavor, but it is delicious and a yummy treat for summer solstice or any day. πŸ™‚

The only thing left to do is eat and enjoy the yummy taste of summer and some time with my girls. Hello HERSHEY’s! Hello, Happy! Hello Summer Memories!

You can get your recipe below. Enjoy!
